Vegan Kaiserschmarrn
A fluffy and delicious vegan Kaiserschmarrn without egg, milk, and butter. This healthy version of the Austrian dessert becomes airy through the combination of sparkling water, baking soda, and vinegar, even though no animal ingredients are used.

| 270 g | Spelt flour type 630 or wheat flour |
| 40 g | Sugar |
| 2 TL | Baking powder |
| 1 TL | Baking soda |
| 400 ml | Plant-based milk (e.g., almond milk) |
| 40 g | Coconut oil for the batter |
| 1 TL | Apple cider vinegar |
| 100 ml | Sparkling mineral water |
| 2 EL | Coconut oil for frying |
| 4 EL | Sugar for caramelizing |
| nach Belieben | Raisins (optional) |
Preparation
- 1Mix all dry ingredients (flour, sugar, baking powder, baking soda) in a bowl.
- 2Stir the milk into the dry mixture until a smooth batter forms.
- 3Add the liquid coconut oil and apple cider vinegar and stir briefly.
- 4Stir in the sparkling mineral water briefly and very gently to avoid losing all the carbonation.
- 5Heat two large pans with some coconut oil each (or divide the batter and cook in one large pan).
- 6Pour the batter into the pan and cook over medium to high heat until the bottom is lightly browned and set.
- 7Remove the pancake from the pan, cut it into four pieces, and carefully toss them back into the pan.
- 8When the batter in the pan becomes too firm, tear the pieces into coarse chunks with two spatulas or a fork.
- 9Sprinkle the sugar over the pieces and caramelize briefly until the sugar melts and caramelizes.
- 10Serve the Kaiserschmarrn immediately, preferably with some fruit or a side dish.
Notes & tips
This recipe is vegan and contains no animal products. The amount of sugar is subtle; it can be increased as desired. If you prefer it sugar-free, you can replace the sugar with xylitol or maple syrup. Alternatively, instead of baking powder and baking soda, only baking powder can be used. For a more intense coconut flavor, coconut oil is recommended, but sunflower or rapeseed oil also work.
