Easy Gyros Recipe – Greek Style

Gyros like from the Greek: tender meat in a spicy marinade, fried crispy. Perfect after-work cooking for the whole family. With turkey, chicken, or pork.

600 g Turkey cutlets, chicken breast fillet, or pork cutlets (in strips)
1 (ca. 75 g) Onion, medium-sized
100 ml Olive oil
3 TL Mild sweet paprika powder
2 TL Oregano, dried
2 TL Thyme, dried
1 TL Salt
0,5-1 TL Ground cumin
1 Prise Black pepper, freshly ground
1 TL Hot mustard (check for additives)
2 Zehen Garlic, pressed
1 EL Lemon juice, freshly squeezed

Preparation

  1. 1Pat 600 g meat (turkey, chicken, or pork) dry with a kitchen towel and cut into strips. Peel the onion and also cut into strips.
  2. 2For the marinade, put all ingredients into a sufficiently large bowl: 100 ml olive oil, 3 tsp paprika powder, 2 tsp oregano, 2 tsp thyme, 1 tsp salt, 0.5-1 tsp cumin, 1 pinch of pepper, 1 tsp hot mustard. Press 2 cloves of garlic, add 1 tbsp lemon juice, and stir everything together with a whisk.
  3. 3Add the gyros meat and onions to the marinade and mix everything well together.
  4. 4Covered (e.g., with plastic wrap) let marinate in the refrigerator for at least 3 hours, better overnight.
  5. 5Before cooking, take the meat out of the refrigerator 15-20 minutes beforehand and stir again with the settled oil. Heat a pan WITHOUT oil and fry the gyros in batches over high heat. Keep the batches warm in the oven at approx. 60 °C (140 °F) with convection.
  6. 6Important: Fry the meat in batches! If there is too much meat in the pan, the heat cannot be maintained — the meat simmers, dries out, and doesn't get crispy. Large pan (e.g., 32 cm): 2 batches, smaller pan: better 3 batches.
  7. 7The gyros pan tastes excellent with homemade fries or wedges and salad (e.g., coleslaw). Also delicious served in pita pockets.

Notes & tips

ALLERGY TAMARA (avoid cow's milk + egg + soy): MOSTLY SUITABLE - Meat, olive oil, spices, and lemon juice are free of milk, egg, and soy. ATTENTION mustard: 1 tsp hot mustard may contain milk components or soy - check the label and if necessary choose a pure mustard without additives. The meat should marinate for at least 3 HOURS, better overnight! Fry in batches, otherwise it won't get crispy. Cumin: at 1 tsp dominant, at 0.5 tsp subtle aroma. Calories per serving approx. 405 kcal.
