Bourbon Bacon Jam

Preparation
- 1Cut the bacon into coarse strips. Peel the onions and cut them into half slices.
- 2Lightly fry the bacon in a wok until crispy. Add the onions and let them roast until translucent.
- 3Add the brown sugar and let everything caramelize lightly (caution: sugar burns quickly).
- 4Deglaze with bourbon (caution: flames may flare up) and season with coarse pepper and salt.
- 5Let it simmer down until a jam-like consistency forms.
- 6Serve — ideal as a side dish for meat and burgers.
