Ossobuco alla Milanese

| 4 Scheiben à 250 g | Veal shank (sliced) |
| 50 g | Flour |
| 1 Stück | Onion |
| 1 Stück | Carrot |
| 1 Stück | Celery stalk |
| 200 ml | White wine |
| 500 ml | Beef broth |
| 2 EL | Tomato paste |
| 1 Bund | Parsley |
| 1 TL | Lemon zest |
| 1 Stück | Garlic clove |
Preparation
- 1Dredge the veal shank slices in flour, sear them vigorously on both sides in oil, then remove.
- 2Sauté the finely diced vegetables in the pan drippings, briefly toast the tomato paste with them.
- 3Deglaze with wine, add the broth, and return the veal shanks to the pot.
- 4Cover and braise over low heat for about 2 hours, until the meat is tender.
- 5For the gremolata: finely chop the parsley, lemon zest, and garlic.
- 6Sprinkle the gremolata over the ossobuco and serve with risotto.
Notes & tips
Note: Contains NO egg, NO soy. May contain butter (cow's milk) — replaceable with olive oil or vegan butter. Gremolata (parsley, lemon zest, garlic) is free of allergens. Serve with saffron risotto.
