Greek Lamb with Lemon and Oregano
Lamb braised in the oven with potatoes, lemon, oregano, and garlic — a festive classic.

| 1,5 kg | Leg of lamb (or lamb shoulder) |
| 800 g | Potatoes |
| 6 Stück | Garlic cloves |
| 2 Stück | Lemons (juice) |
| 2 EL | Oregano (dried) |
| 80 ml | Olive oil |
| je 1 Prise | Salt & pepper |
| 300 ml | Water or broth |
Preparation
- 1Preheat the oven to 170 °C.
- 2Rub the lamb all over with garlic, oregano, salt, pepper, and lemon juice.
- 3Place the meat in a roasting pan, drizzle with olive oil, and add water/broth.
- 4Cover and braise for about 1.5–2 hours, turning occasionally and basting with the pan juices.
- 5Cut the potatoes into wedges and add them to the roasting pan for the last 45 minutes.
- 6Remove the meat, let it rest briefly, slice it, and serve with the potatoes and pan juices.
