Step by step through the recipe

- 3 2 EL Heat the olive oil in a large pan over high heat until the oil shimmers slightly.
- 4 400 g Put the wild mushrooms into the pan in a single layer and sear vigorously for 2 to 3 minutes without stirring.
- 5 Turn the mushrooms and fry for another 2 minutes until they are browned all over and completely cooked through.
- 6 2 Add the chopped garlic cloves and fry for 30 seconds until fragrant but not brown.
- 7 3 EL Stir in the parsley and 1 EL lemon juice, season with a little salt and a little pepper and take the pan off the heat.
- 8 2 Scheiben Toast the farmhouse bread, arrange the pan-fried wild mushrooms on top and serve immediately.
Notes & tips
Wild-picked mushrooms should always be checked by an expert and mushrooms must always be cooked through completely. Tip: Do not overcrowd the pan and only turn the mushrooms once they have taken on colour — that way they fry instead of steaming. Variation: With 1 EL chopped thyme or a few chilli flakes it becomes more savoury; if you prefer it milder, replace the lemon juice with a splash of white wine.
