Ingredients

Makes: approx. 4 pieces Amounts adjust automatically.
250 g Speculoos biscuits (vegan)
4 Stück Speculoos biscuits for decoration (vegan)
60 g Vegan butter
200 g Vegan whipping cream
250 g Vegan quark
150 g Vegan yogurt
100 g Sugar
1 Pck. Vanilla sugar
350 g Frozen raspberries

Preparation

Step by step through the recipe

  1. 1 Whip the 200 g vegan whipping cream until stiff. Mix the 250 g vegan quark, 150 g vegan yogurt, 50 g of the sugar and 1 Pck. vanilla sugar in a bowl and fold in the cream in portions. Place the cream in the refrigerator.
  2. 2 Finely crush the 250 g speculoos biscuits in a blender.
  3. 3 Melt the 60 g vegan butter in a saucepan over low heat and stir in the fine speculoos crumbs well. Divide the mixture among 4 large or 8 smaller glasses and press the base down a little with a muddler. Place the glasses in the refrigerator with the cream and let them firm up a little.
  4. 4 Bring the 350 g frozen raspberries to the boil in a saucepan over high heat until they soften. Add the remaining 50 g sugar, stir well and let them reduce a little. Allow to cool.
  5. 5 Spread the cooled cream evenly over the glasses and wobble the glasses slightly so the layer becomes nice and even. Spread the cooled raspberry layer on top. Decorate with the 4 Stück speculoos biscuits for decoration and serve.

Notes & tips

Tip: The ingredients make 4 very large or 8 somewhat smaller portions. Preparation: The dessert can be prepared a day in advance. Store the components separately and layer them only just before serving. Once fully layered, the base softens a little, but it still tastes good — put the decorative biscuit on top only shortly before serving. Storage: Store airtight in the refrigerator so the dessert doesn't pick up fridge odours (e.g. wrap the glasses in aluminium foil). Variation: Outside the Christmas season, replace the speculoos biscuits with vegan butter biscuits.
