Ingredients

Makes: 1 cake (4 pieces)
Amounts are for the whole bake — choose ½, 1 or 2.
4 Stück (ca. 600 g) tart apples (e.g. Boskoop, Granny Smith)
200 g wheat flour type 405 (or spelt flour)
250 ml oat milk
2 TL baking powder
1 TL cinnamon
2 EL sugar
4 EL applesauce
1 Prise salt
etwas oil for frying
nach Geschmack cinnamon sugar or powdered sugar for sprinkling

Preparation

Step by step through the recipe

  1. 1 4 Stück tart apples (ca. 600 g) peel, core and cut into about 0,5 cm thick rings.
  2. 2 200 g wheat flour, 250 ml oat milk, 2 TL baking powder, 1 TL cinnamon, 2 EL sugar, 4 EL applesauce and 1 Prise salt in a bowl and stir into a smooth batter – it should not be stirred too long or too vigorously so that the fritters stay fluffy.
  3. 3 Preheat a little oil in a pan over medium heat.
  4. 4 Dip the apple rings into the batter so that they are evenly coated, and briefly let excess batter drip off.
  5. 5 Put the apple rings into the hot pan – add a little more oil if needed, as the apple pieces absorb fat – and fry over medium heat until golden brown on both sides, this only takes a few minutes per side.
  6. 6 Let the finished apple fritters drain on kitchen paper and sprinkle with cinnamon sugar or powdered sugar to taste while still warm; best enjoyed immediately.

Notes & tips

Alternatively, almond or rice milk also works. For the powdered sugar, make sure it's a purely plant-based product. Tips: It's best to choose slightly tart apples (Boskoop, Granny Smith, Cox Orange); pears, peaches, nectarines or pineapple work just as well. For more flavor, add cinnamon, vanilla, nutmeg, cardamom, gingerbread spice or a little lemon zest to the batter. If you like it sweeter, increase the amount of sugar; for a savory combination (e.g. with soups), omit the sugar. Quick variation: Cut the apples into cubes, mix into the batter and drop small dollops like pancakes into the pan with a spoon. Storage: Keeps for 1–2 days in an airtight container in the refrigerator. To reheat, briefly put in a pan, air fryer or oven – they become softer in the microwave. Serving idea: Sprinkle warm with cinnamon sugar or powdered sugar; vanilla sauce or a scoop of vanilla ice cream (choose vegan) goes well with it.
