Vegan Banana Bread

A quick and moist vegan banana bread that is perfect for using up leftover ripe bananas. The bread is gluten-free (thanks to almond drink), lactose-free, and can easily be enhanced with chocolate or berries.

Ingredients

Makes: 1 loaf (≈12 slices)
Amounts are for the whole bake — choose ½, 1 or 2.
3 Stück Bananas (ripe)
150 ml Almond drink
50 g Rapeseed oil
60 g Sugar
1 Tütchen Vanilla sugar
1-2 TL Apple cider vinegar
300 g Flour
1-2 TL Baking powder
1 Prise Salt

Preparation

  1. 1 Preheat the oven to 175 °C fan (or 195 °C conventional). Lightly grease a loaf pan (approx. 25 cm).
  2. 2 Peel the bananas and mash them well with a fork.
  3. 3 Add almond drink, rapeseed oil, sugar, vanilla sugar, and apple cider vinegar, and stir well.
  4. 4 Then add flour, baking powder, and salt, and stir quickly until everything is just combined. Do not overmix, otherwise the bread will not rise properly.
  5. 5 Optional: Gently and quickly fold in additional ingredients such as berries or chocolate chips.
  6. 6 Pour the batter into the loaf pan and bake for about 40 minutes, until a toothpick inserted in the center comes out clean.

Notes & tips

This recipe is already vegan, lactose-free, and contains no eggs. Since almond drink and rapeseed oil are used, it is also suitable for people with nut allergies (peanuts, hazelnuts, etc.), but NOT for people with almond allergies. Allergen substitutions based on the configured rules: - Lactose: The recipe is already lactose-free (contains no dairy products). - Cow's milk: The recipe is already milk-free. - Egg: The recipe is already egg-free. - Soy: The recipe is already soy-free (no soy flour or soy yogurt used). - Peanuts: The recipe is peanut-free (no peanut butter frosting included).
