Ingredients

800 g Ground meat (mixed or beef)
700 g Zucchini
200 g Vegan feta cheese (e.g., made from coconut or almond)
250 g Cherry tomatoes
400 g Chopped tomatoes
1 Stück Onion
1 Stück Garlic clove
3 EL Olive oil
2 TL Salt
1 Prise Pepper
1 EL Sweet paprika powder
1 EL Oregano

Preparation

  1. 1Wash the zucchini, cut off the ends, and halve them. Remove the core with a spoon and then cut the zucchini into small cubes.
  2. 2Cut the vegan feta into small cubes. Peel the onion and garlic. Cut the garlic into cubes and the onion into thin slices.
  3. 3Heat two tablespoons of olive oil in a large skillet. Add the ground meat, garlic cubes, onion slices, one teaspoon of salt, pepper, paprika powder, and oregano. Sauté the ground meat until crumbly.
  4. 4Heat two tablespoons of olive oil in another skillet. Sauté the zucchini pieces in it for five minutes. Sprinkle a teaspoon of salt over them. Add the cherry tomatoes and sauté them for another five minutes.
  5. 5Add the vegetable mixture to the ground meat. Pour in the chopped tomatoes. Let everything cook for five minutes. Remove the zucchini and ground meat skillet from the heat and fold in the feta cubes.

Notes & tips

Use fresh ground meat (beef or mixed) for a classic flavor experience. The zucchini become soft and juicy through braising. Serve the dish with rice, pasta, or flatbread. IMPORTANT: The feta cheese has been replaced with a vegan feta substitute (e.g., based on coconut or almond) due to your lactose allergy. Please also make sure that the ground meat and tomato products (cherry tomatoes, chopped tomatoes) are lactose-free, as they can often contain additives.
