| 40 g | Durum wheat semolina |
| 50 g | Sugar |
| 21 g | Fresh yeast |
| 1 Prise | Salt |
| 170 g | Water |
| 100 g | Apple sauce |
| 1 TL | Cinnamon, ground |
| 3 EL | Sugar |
| etwas | Writing icing, black or dark brown |
Preparation
Step by step through the recipe
- 1 Put 210 g flour, 40 g durum wheat semolina, 50 g sugar, 21 g fresh yeast, 1 Prise salt and 170 g water into the mixing bowl of the stand mixer and knead for a few minutes until an elastic dough has formed.
- 2 Leave the dough to rest covered for 30 minutes. During this time, mix 3 EL sugar with 1 TL ground cinnamon in a small bowl.
- 3 Roll out the dough on the lightly floured work surface. Line a baking tray with baking paper and preheat the oven to 180 °C fan.
- 4 Cut out ghosts with a suitable ghost cookie cutter. Knead the dough again, roll it out and cut out more ghosts. Place the ghosts directly on the baking tray lined with baking paper.
- 5 Brush all ghosts with 100 g apple sauce and sprinkle with the sugar-cinnamon mixture.
- 6 Place the baking tray on the second shelf from the top in the oven and bake the apple ghosts for 10–12 minutes until they are lightly browned.
- 7 Remove the ghosts from the oven and leave to cool. Use some writing icing to draw two small eyes on each ghost. Allow the writing icing to dry briefly.
- 8 Arrange the ghosts on a plate or board or store them in a small tin for up to one day.
Notes & tips
The ghosts taste best fresh and keep in a tin for about one day.
