Rib Burger with Homemade BBQ Glaze

Profile picture by @NomNom

Juicy, elongated pork mince patties with a rib look and caramelised BBQ glaze in soft, elongated burger buns, topped with mild diced onions and gherkin slices. Our ‘Rib Burger’ is our own recipe, inspired by the classic — not a product of McDonald’s.

Amounts adjust automatically.
600 g Pork mince (with fat content)
1 TL Salt (for the patties)
1/2 TL Pepper
2 TL Paprika powder, smoked
1 TL Onion powder
2 EL Oil
150 g Ketchup
2 EL Vinegar
2 EL Brown sugar
1 TL Paprika powder, sweet
1 TL Mustard
2 Onions
8 Scheiben Gherkins
4 Stück Ready-made burger buns (elongated and soft — e.g. brioche or hot dog buns)

Preparation

Step by step through the recipe

  1. 1 For the BBQ glaze, stir together 150 g ketchup, 2 EL vinegar, 2 EL brown sugar, 1 TL sweet paprika powder and 1 TL mustard in a small bowl until smooth.
  2. 2 Thoroughly knead 600 g pork mince with 1 TL salt, 1/2 TL pepper, 2 TL smoked paprika powder and 1 TL onion powder.
  3. 3 Shape the mince mixture into elongated, flat patties and lightly press the top surface crosswise at short intervals with the back of a spoon, creating rib segments.
  4. 4 Heat 2 EL oil in a pan and fry the patties vigorously on both sides until cooked through.
  5. 5 Brush the BBQ glaze onto the patties and let it caramelise briefly in the pan.
  6. 6 Finely dice 2 onions.
  7. 7 Cut the 4 Stück buns open and toast them briefly in the pan.
  8. 8 Place the patties in the buns, top with the diced onions and 8 Scheiben gherkins, and put the tops on.

Notes & tips

Tip: Chill the shaped patties briefly before frying – this helps them hold together better and keeps the rib look intact while frying. Extra easy: Use ready-made soft burger buns (elongated — e.g. brioche or hot dog buns) and toast them briefly – done in around 40 minutes, with no baking at all. Spicy version: Stir 1 tsp chilli flakes or a pinch of cayenne pepper into the BBQ glaze. Leftovers: Freeze fried patties in portions and reheat in a pan with a little glaze.
