| 100 g | sugar |
| 1 Packung | vanilla sugar |
| 1 Prise | salt |
| 2 | eggs (size M) |
| 220 g | wheat flour |

| 150 ml | milk |
| 10 g | butter |
| 100 g | icing sugar |
| 20 g | cocoa powder |
| 100 g | desiccated coconut for rolling |
Preparation
Step by step through the recipe
- 1 Preheat the oven to 180 °C top and bottom heat (fan: 160 °C). Grease a baking dish (17 cm x 23 cm) with a little fat. For the batter 120 g beat soft butter, 100 g sugar, 1 Packung vanilla sugar and 1 Prise salt until fluffy. Add 2 eggs (size M) one after another and continue beating on the highest setting of the hand mixer. Mix 220 g wheat flour with 2 TL baking powder and stir alternately with 100 ml milk into the batter.
- 2 Pour the batter into the prepared baking dish and smooth the top. Bake the cake in the preheated oven for about 30 minutes. After baking, turn it out onto a cutting board and leave to cool for at least one hour.
- 3 Only once the cake has cooled, prepare the icing. To do this, bring 150 ml milk and 10 g butter to the boil in a saucepan. Take the saucepan off the hob, add 100 g icing sugar and 20 g cocoa powder and whisk until smooth. Set aside.
- 4 Cut the cake into equal squares (approx. 5 cm x 5 cm). Put 100 g desiccated coconut into a shallow bowl. Dip the pieces of cake one after another briefly into the warm icing, then roll them straight away in the desiccated coconut.
Notes & tips
Filled version: Cut the baked cake in half horizontally before slicing and spread with about 100 g of boiled red jam – this makes the Lamingtons even juicier. Storage: Kept airtight, the little cakes will keep at room temperature for at least 1 week.
