Ingredients

Makes: 1 cake (12 pieces)
Amounts are for the whole bake — choose ½, 1 or 2.
150 g flour
50 g sugar
1 Packung vanilla sugar
1 Prise salt
100 g soft butter
600 ml milk
2 Packungen vanilla pudding powder
1 kg low-fat quark
150 g sugar
3 eggs (size M)
1 vanilla pod
2 TL lemon zest
150 ml neutral cooking oil
etwas icing sugar for dusting

Preparation

Step by step through the recipe

  1. 1 Preheat the oven to 200 degrees (fan: 180 degrees). Line the base of a springform tin (Ø 26 cm) with baking paper.
  2. 2 150 g Mix the flour with 50 g sugar, 1 packet of vanilla sugar and 1 Prise salt. Add 100 g soft butter and knead everything into a dough. Press the dough into the springform tin as the base (do not pull up a rim!), prick the base several times with a fork and bake for 12–14 minutes.
  3. 3 In the meantime, stir 100 ml of the milk with 2 Packungen vanilla pudding powder until smooth. Mix 1 kg low-fat quark with 150 g sugar and 3 eggs in a large bowl. Halve the vanilla pod lengthways and scrape out the seeds.
  4. 4 Add the vanilla seeds to the quark and stir into the quark together with 2 TL lemon zest and the pudding powder mixture. Finally, add the remaining 500 ml milk and 150 ml neutral cooking oil while stirring and mix everything well for 4 minutes.
  5. 5 Reduce the oven temperature to 160 degrees (fan: 140 degrees). Pour the liquid quark mixture into the hot springform tin and bake for approx. 60 minutes. Leave to cool completely on a cake rack, remove the ring and, if desired, dust the cake with a little icing sugar before serving.

Notes & tips

For anyone who loves cheesecake with a rim: simply make double the amount of shortcrust pastry – that way there is enough dough for a crispy rim; the cheesecake filling does not need to be doubled for this. Fruity variation: with pureed and whole raspberries and strawberries as a topping. Important: if the quark mixture is not stirred thoroughly at the end, the oil can separate during baking. Tip for particularly gentle cooling: after the baking time, leave the cake in the switched-off oven with the oven door closed until the oven has cooled down completely – this way the cake will not sink and stays beautifully creamy.
