400 g cooked chestnuts (vacuum-packed)
1 onion
1 garlic clove
1 carrot
1 celery stalk
2 EL butter
1 EL olive oil
1 l vegetable broth
1 bay leaf
1 thyme sprig
200 ml cream
etwas salt
etwas pepper
1 Prise nutmeg
2 EL crème fraîche
50 g chestnuts for the strips

Preparation

Step by step through the recipe

  1. 1 1 Finely dice onion and 1 garlic clove. 1 Cut carrot and 1 celery into small cubes.
  2. 2 2 EL Melt butter and 1 EL olive oil in a large pot over medium heat. Sauté the diced onion and garlic until translucent.
  3. 3 Add the diced carrot and celery and sauté briefly until the vegetables take on a little color.
  4. 4 400 g Roughly chop cooked chestnuts, add to the pot and roast briefly. Deglaze with 1 l vegetable broth, add 1 bay leaf and 1 thyme sprig and let the soup simmer gently covered for about 20 minutes until the vegetables are soft.
  5. 5 Remove bay leaf and thyme sprig and purée the soup very finely and creamy with an immersion blender.
  6. 6 200 ml Stir in cream and season the soup with a little salt, a little pepper and 1 Prise nutmeg. Only heat gently, do not let it boil anymore.
  7. 7 For the strips, cut 50 g chestnuts into fine strips and roast in a dry pan over medium heat until golden brown and crispy.
  8. 8 Fill the soup into warmed bowls, add a dollop of 2 EL crème fraîche to each and serve sprinkled with the roasted chestnut strips.

Notes & tips

Note: Contains milk/cream. Variation: With oat cuisine instead of cream and plant-based margarine instead of butter, the soup can be made vegan. Tip: Vacuum-packed or already cooked chestnuts are the time-saving shortcut — fresh chestnuts must first be scored, roasted and peeled. The soup can be prepared well a day in advance; when reheating, add a little broth or water as it thickens.
