250 g Flour
30 g Cocoa powder
2 TL Baking powder
1/2 TL Baking soda
150 g Sugar
1 Päckchen Vanilla sugar
1 Prise Salt
2 Stück Eggs
200 ml Milk
120 ml neutral oil
150 g Icing sugar
2–3 EL Lemon juice
etwas green food colouring
24 Stück Sugar eyes
6 Stück light-coloured biscuits

Preparation

Step by step through the recipe

  1. 1 Preheat the oven to 180 °C top/bottom heat and line a muffin tin with 12 paper cases.
  2. 2 Mix 250 g flour, 30 g cocoa powder, 2 TL baking powder, 1/2 TL baking soda and 1 Prise salt in a bowl.
  3. 3 In a second bowl, whisk 150 g sugar, 1 Päckchen vanilla sugar, 2 Stück eggs, 200 ml milk and 120 ml neutral oil.
  4. 4 Add the flour mixture to the wet ingredients and stir only briefly until the batter is smooth.
  5. 5 Divide the batter evenly among the 12 paper cases so that they are filled about three quarters full.
  6. 6 Bake the muffins in the preheated oven for about 18–20 minutes; the skewer test will show whether they are done. Then let them cool completely.
  7. 7 For the icing, stir 150 g icing sugar with 2–3 EL lemon juice and a little green food colouring until smooth.
  8. 8 Spread the green icing over the cooled muffins and let it run slightly.
  9. 9 Halve the 6 Stück light-coloured biscuits so that you get 12 teeth.
  10. 10 Decorate each muffin with 24 Stück sugar eyes (two per muffin) and a biscuit tooth as a mouth and let the icing set.

Notes & tips

Note: Contains milk, egg and gluten. Check the sugar eyes for soy and milk before buying, or pipe them yourself from stiff icing. Tip: The icing should be thick and sticky – if it is too thin, stir in a little more icing sugar. The muffins keep for about 2 days in a tin; it is best to decorate them shortly before serving.
