Meatballs with Tomato Sauce and Ribbon Noodles
Juicy meatballs in an aromatic tomato sauce with a splash of plant-based cream, served with wide ribbon noodles – a classic comfort dish, entirely free of cow's milk and egg.

Ingredients

| 400 g | Chopped tomatoes (canned) |
| 200 ml | Soy cream |
| 1 TL | Oregano (dried) |
| 1 TL | Sugar |

| 400 g | Ribbon noodles |
Preparation
Step by step through the recipe
- 1 Finely chop 1 Stück onion and 2 Stück garlic cloves.
- 2 Mix 2 EL spelt flour with 4 EL water and leave to swell for 5 minutes – this replaces the egg as a binding agent.
- 3 Thoroughly knead 500 g minced meat with the spelt flour mixture, 4 EL breadcrumbs, half of the chopped onion, half of the garlic, a little salt and a little pepper.
- 4 With wet hands, shape small, evenly sized balls from the minced meat mixture.
- 5 Heat 2 EL olive oil in a large frying pan and sear the meatballs well on all sides, then remove them from the pan.
- 6 Sauté the remaining onion and the remaining garlic in the frying fat until translucent, add 2 EL tomato paste and roast for 1 minute.
- 7 Pour in 400 g chopped tomatoes and 200 ml soy cream, stir in 1 TL oregano, 1 TL sugar, a little salt and a little pepper and let the sauce simmer for 10 minutes over medium heat.
- 8 Return the meatballs to the sauce and cook covered over low heat for a further 10 minutes.
- 9 In the meantime, cook 400 g ribbon noodles in plenty of salted water according to the package instructions until al dente and drain.
- 10 Roughly chop 1 Bund basil, stir it into the tomato sauce and serve the meatballs with the sauce alongside the ribbon noodles.
Notes & tips
Allergy note: Instead of egg, the minced meat mixture is bound with 2 EL spelt flour and 4 EL water (leave to swell for 5 minutes) – this is free of cow's milk and egg. Alternatively, soy flour or chickpea flour also works as a binder. Soy cream is used instead of cream. Check the ingredient list for breadcrumbs and ribbon noodles, as some products may contain egg – use egg-free products if needed. Tip: The meatballs also taste good reheated the next day; the sauce freezes well. If you like it more punchy, add a pinch of chilli flakes to the sauce.
