Ingredients

1,5 kg Beef (roast or shoulder)
6 Stück Dried guajillo chiles
3 Stück Dried ancho chiles
2 Stück Onions
5 Stück Garlic cloves
2 TL Cumin
1 TL Oregano
2 EL Vinegar
12 Stück Corn tortillas
je 1 Bund Onion & cilantro (for serving)
2 Stück Lime
1 TL Salt

Preparation

  1. 1Remove seeds from chiles, toast, soak, and puree with garlic, cumin, oregano, and vinegar.
  2. 2Place the meat in a Dutch oven with the chili paste and plenty of water; salt it.
  3. 3Cover and braise at 160 °C for about 4 hours, until the meat is tender.
  4. 4Remove the meat and shred it.
  5. 5Strain the broth and serve as consommé.
  6. 6Dip tortillas in some broth, fill with meat, fry crisp in a hot pan, and serve with onion, cilantro, and lime.

Note: Contains NO milk, egg, soy, gluten (only if using wheat tortilla: Choose corn tortilla). Very low-allergen — meat + chili broth + corn. Garnish with onion + cilantro.
