Birria (Quesabirria Tacos)
Slow-braised beef in a spicy chili broth — popular as a soup or in tacos.

| 1,5 kg | Beef (roast or shoulder) |
| 6 Stück | Dried guajillo chiles |
| 3 Stück | Dried ancho chiles |
| 2 Stück | Onions |
| 5 Stück | Garlic cloves |
| 2 TL | Cumin |
| 1 TL | Oregano |
| 2 EL | Vinegar |
| 12 Stück | Corn tortillas |
| je 1 Bund | Onion & cilantro (for serving) |
| 2 Stück | Lime |
| 1 TL | Salt |
Preparation
- 1Remove seeds from chiles, toast, soak, and puree with garlic, cumin, oregano, and vinegar.
- 2Place the meat in a Dutch oven with the chili paste and plenty of water; salt it.
- 3Cover and braise at 160 °C for about 4 hours, until the meat is tender.
- 4Remove the meat and shred it.
- 5Strain the broth and serve as consommé.
- 6Dip tortillas in some broth, fill with meat, fry crisp in a hot pan, and serve with onion, cilantro, and lime.
Notes & tips
Note: Contains NO milk, egg, soy, gluten (only if using wheat tortilla: Choose corn tortilla). Very low-allergen — meat + chili broth + corn. Garnish with onion + cilantro.
