Yogurt Chunks Muffins – made by Leonie
Moist muffins with plain yogurt, lemon juice and white chocolate chunks – quick to make and wonderfully fluffy.

Ingredients
| 250 g | flour |
| 80 g | sugar |
| 1 Prise | salt |
| 2 TL | baking powder |
| 120–150 g | white chocolate chunks |
| 100 ml | neutral oil |
| 2 | eggs |
| 200 ml | plain yogurt |
| ½ TL | vanilla extract |
| 2 EL | lemon juice |
Preparation
- 1 Preheat the oven to 180 °C top/bottom heat and prepare the muffin liners.
- 2 Mix the dry ingredients (flour, sugar, salt, baking powder) in a bowl.
- 3 Mix the wet ingredients (oil, eggs, plain yogurt, vanilla extract, lemon juice) in a separate bowl.
- 4 Add the wet ingredients to the dry ingredients and stir only briefly, until no more flour is visible.
- 5 Fold in the white chocolate chunks.
- 6 Fill the batter into the liners (¾ full) and bake the muffins for 18–22 minutes.
Notes & tips
Baking tip: Before baking, place a few white chocolate chunks on top of the muffins – it looks pretty and adds extra crunch. Stir the muffins only briefly, otherwise they will turn tough.
