Favorite Apple Cake
Juicy apple cake with shortcrust pastry and a filling of peeled apple cubes – optionally with a pastry lid or streusel. A simple classic for the whole family.

Ingredients
| 130 g | Butter |
| 150 g | Sugar |
| 2 | Eggs |
| 350 g | Flour |
| 3 gestr. TL | Baking powder |
| 1 TL | Baking soda |
| 900g | Apples |
| 1Pk | Vanilla sugar |
| 1TL | Vanilla extract |
Preparation
- 1 Make a shortcrust pastry from the butter, sugar, eggs, flour, baking powder, baking soda and the rum flavoring.
- 2 Grease a springform pan and line the base with about 2/3 of the dough, pressing it up the sides.
- 3 Fill the peeled apple cubes into the pan and sprinkle with the vanilla sugar.
- 4 Roll out the remaining dough and cover the apples with it – alternatively, simply scatter streusel over the apples.
- 5 Bake the cake in the preheated oven at 170 °C fan (convection) for 65–75 minutes, depending on your oven.
- 6 Take the cake out of the oven, let it cool briefly in the pan, then release it from the pan and let it cool completely.
Notes & tips
Instead of the pastry lid, the apples can simply be covered with streusel – to do this, crumble the remaining dough ingredients with a little butter and flour into streusel. The cake tastes best when it has cooled completely. Leftovers keep for several days in a tin.
